Our whole-grain pancakes are made with Petra 9 flour, a carefully selected soft wheat stone-milled using the innovative "augmented stone milling" process. Rich in noble fibers and retaining all parts of the grain, this flour delivers an authentic and full-bodied flavor. The addition of buttermilk, derived from milk transformation, ensures softness and lightness, with its natural acidity activating the leavening process to create a fluffy, airy texture.

Our naturally leavened bread, made exclusively for us by MADRÈ bakery, is crafted with flour, water, salt, and, of course, natural sourdough starter. Made from organic grains grown and milled in the hills between Cesena and Forlì, it stands out for its long fermentation, high hydration, and intense baking process that enhances its flavor, texture, and digestibility.
